Steel Cheese Trier.

A rare and fine cheese trier, Georgian, one side of the stirrup has a bifurcated cutting edge, the other a single.

Between the stirrip and the main blade is a blacksmith's decorative device.

The main blade is dished and sharpened to assist a maker or merchant in the task of removing a core of cheese to test for maturity and to access it’s texture. The tapering shape of the cutting scoop allows the plug to be returned to the wheel for further maturing.

The form of this tool is now as was then.
